Take a look at the manual for more information:

http://www.redshift.hu/TheQuestHD/manual.pdf

Adding points to Environment magic will make the following spells more effective. (Especially Feather and most importantly Enchant) The more points you spend on Environment magic will allow you to have a higher enchant level)

Disarm - Disarm trap - This spell disarms a trap.
Unlock - Unlock - This spell unlocks an object.
Mark - Mark position - This spell memorizes a position in the world.
Recall - Teleport - This transfers the player back to a memorized position.
Feather - Feather - This spell lightens encumbrance.
Town portal - Teleport (fixed) - This spell transfers the player to the nearest city.
Recharge wand - Recharge wands This recharges a wand.
Enchant - Enchant item This spell enchants an item.
Create food - Creates some food - This spell creates some food.

It's one of the most important skills in the game if you ask me. If you have a high enough skill in Environment Magic, an "Enchant Suit" (just do a search if you don't know what it is) and a fortify magic potion from each potency level you can enchant a higher level than any magic shop (at least in the base game). This is VERY handy!

Yes enchant is VERY useful and VERY needed in the game.

I just did the sunken Monistary and the first 3/4 killed me. I was then looking at this enchanting stuff and enchanted all my armor and weapons. VERY HELPFUL!!

However I did mess up, I think. I enchanted a few items and didn't realize that I could increase the effectiveness... Are these items now unenchantable? Meaning I cannot go back and add/modify them? If so that sucks as I only placed +1 from a few categories...

I believe that one you do an enchant i dont believe you can undo it. I have a Mitheral Light Armour which I'm still deciding on how to / what to add to it as it has 600 storage on it. And you need to do it in one go as once your finished you cant add more or undo what you've done so be sure to once again Save your game before u do enchanting.

Another handy enchanting tip from me is to get your hands on some Mystic Robes as soon as possible. You can find them as random drops in the Sunken Monastery, and you can also buy them from the clothing shop in Mithria (but most people don't get there very quick early in the game). These robes have 600 storage, so they can add up to 40 to any skill you want. I always make one for Environment Magic, Alchemy, Persuasion, Appraise and Repair. Obviously, you'll need to enchant other pieces to make the effects greater, but 40 additional skill points is an EXCELLENT place to start! :D

Oh, and a pro-tip about the Sunken Monastery, make sure you always save before defeating ANY of the monsters in there. Almost all of them drop really nice gear, but it's completely random so they can also drop a bunch of junk too. By doing this, I've gotten tons of great items, and you can even go back and redo the dungeon in 7 days time (as long as you haven't been back since). I always just make a save file on the second page right when I'm about to leave there, so I'll have a time stamp of when I can go back. Enjoy! :D

I believe I have seen option to remove the enchant in the shop where you can enchant items...

I just started enchanting because I'm not able to pass sunken Monastery without armor enchanted to magic resistance. Those mobs 3 hit/kill me even with magic resist spell/potion.

I havent seen an unchant option at any shop ive been to in The Quest. Are you certain about this? As everyone i believe has said, once you do enchant something there doesnt look like there is any possible way to either "unenchant" or add to the item if you left free storage space.

Unfortunately, there is no way to unenchant something once it's been enchanted. That being said, ALWAYS save before enchanting anything, and don't be afraid to keep a few of the same pieces of equipment around with different enchantments. Remember, there's a wall nook in the Matras Crypt with permanent storage too, so be sure to mark that location in order to return easily later.
