Save files reverted back to old saves...

Beat the main game, then moved on to Ice and Fire. Have made pretty decent progress on the first island. Didn't play for a Week, and when I came back the only saves available are from when I was midway through the main game... tried uninstalling both, reinstalling and reenabling, but no luck. Am I screwed?

Sorry to hear that. Unfortunately it seems something outside the game went wrong.

If you're playing on iOS, the saves are only stored on your device. You can backup them to your computer (and later restore them) using iTunes Files Sharing (see the pinned topic(s) at the top of this subforum). If save files have gone missing then something has seriously gone wrong with the storage of your device.

The same thing is generally true on Android. The only difference if you are signed into Play Games and enabled Cloud Saves. In that case the game should automatically backup your saves to the Cloud. This should always overwrite older saves with newer ones and never vice versa. But something might have gone wrong. You could try the "Download" button on the Play Games screen which will pull the latest saves from the Cloud, bypassing the on device cache. As you already seem to have lost recent saves on the device, this shouldn't hurt.
